Tomato & Fennel Shrimp with Pasta

I think you might have caught on by now that I LOVE pasta!  It is the ultimate comfort food.  And while it is true that I am on a serious diet I still have to have my pasta! Moderation is key here.

I also have quite a fondness for making sauces.  I attribute that to my grandma Joyce who always made a killer tomato sauce.  On Thanksgiving growing up we would always have her famous sauce.  To this day when I think of Thanksgiving I think of pasta, not turkey.  :)  I will be making my spin on her bolognese sauce this year and will post it.

While the bolognese will be served up in a few weeks, I wanted something lighter so I created this simple (5 ingredient) tomato and fennel sauce and served it with some shrimp and linguine.  It was quite heavenly. Continue reading

Secret Recipe Club – Pumpkin Bread


With Thanksgiving around the corner it is a good time to brush up on some pumpkin recipes.  And as it is Secret Recipe Club time it is always fun to see what other people are cooking and baking.  I was given Family Friends and Food, which is a great blog!  I also really love the name!  It really sums up what cooking is all about.

The recipe I chose was Mom’s Pumpkin Bread. You know it has to be good when it is a family recipe! If you haven’t noticed by now we are always trying to create healthier recipes.   I used agave syrup instead of sugar, apple sauce instead of oil, and no eggs.  While the bread still turned out OK (and definitely healthy) I think sticking to the original recipe would have turned out much better.  I am going to post the original recipe as I think the real thing is worth it!

Roasted Vegetable & Farro Salad

Jason and I have been doing yoga lately…a lot of it. We are Geminis and being Gemini means we sort of get obsessed with things.  Yoga is our current obsession.  So after a lot of breathing and stretching and twisting I made this wholesome meal of Brussel Sprouts, Carrots, Sweet Potato and Farro.  There is something about Yoga that makes me want to be a vegetarian.  :)

But whether you are vegetarian or not you should give this a try.   It is a hearty meal and surprisingly low calorie.  It’s very Earthy!  Just like me, right Rachy?
