Buffalo Chicken Salad with Blue Cheese Vinaigrette

 

It isn’t very often that I come across a recipe so good that I literally have to brag about it.  This however, is one worth bragging about.  The minute I put my fork down, I texted my mom to tell her.  I just had to tell someone.

As you might have picked up on this blog, Chefanie Wambach and I both like to create healthy meals.  I have to be in a bikini in a few weeks which means my meals these days are full of salads and low calorie options.  But that gets old, which is why I am always on the search to pack in the most flavor with the least amount of calories.  This recipe does the trick. It is like your favorite bar snack, cleaned up a bit.  It is spicy and creamy and has all the flavors you expect from chicken wings minus all the calories and fat. The whole salad will only cost you 250 calories.  Success!

BUFFALO CHICKEN SALAD WITH BLUE CHEESE VINAIGRETTE 
Serves 2
Ingredients
8 oz skinless boneless chicken breast
2 celery stalks, chopped
2 carrots, chopped
1 cucumber, chopped
1/2 onion, sliced
Buffalo Wing Hot Sauce
1 Tbs Rice Vinegar
1/2 Tbs Olive Oil
1/2 oz Blue Cheese (+ a little extra for garnish)
pinch of sugar
sprig of dill

Directions
1.  Mix the oil, blue cheese, vinegar, sugar and dill to form a dressing.  Set aside
2.  Grill the onions and chicken on medium heat and keep adding hot sauce throughout the cooking time.  As you are cooking the hot sauce will evaporate/thicken and at that time you should add a few more hits.  You can also probably braise the chicken in the sauce if you want.  Cook until chicken is done and the onions are soft.
3.  Assemble the salad by mixing the dressing with the veggies, topping with chicken/onion mix and sprinkling with remaining cheese.
