Every so often we go to this little neighborhood diner/cafe called The Cove in San Francisco. If you ever find yourself there ask for the Black Bean Burger. It isn’t usually on the menu but it is the most delicious thing ever! You can ask the waiter if they have it and the response is usually yes.
This is my attempt to recreate this delicious healthy meal. I’m not going to lie – mine is better! Ask Jason, he approves!
To my surprise it is extremely easy to make and packs in a fiberous punch. I made really large patties and they only had 190 calories each. I think this might be my new favorite recipe.
Spicy Black Bean Burger
Serves 2
INGREDIENTS
- Can of Black Beans
- 1/3 cup Panko
- 2 generous Tbs Chipotle in Adobo sauce (You can find it in the International/Mexican section)
- Shallots, minced
- Garlic, minced
- 1 Egg, beaten
- Salt & Pepper
- Avocado (toping)
- Tomato slices (toping)
- Spinach (toping)
- Cheese (toping)
- Onion (toping)
DIRECTIONS
Saute the garlic and shallots for a minute to soften.
Rinse and drain the beans and set aside half.
Mash one half of the beans with the shallot/garlic mixture.
Add the chipotle & salt/pepper
Stir in the panko
Stir in the egg
Stir in the remainder of the beans
Form into patties
Refrigerate for 20 minutes at least so they harden
Grill until heated all the way through
Serve with fixings of your choice. I used cheese, tomato, onion and avocado.
