Falafel Burger with Tzatziki

 

Bean burgers are my new found favorite meal.  Last week I tried a Chipotle Black Bean burger which turned out great.  This recipe might be even better.  It combines the traditional flavors of Falafel with a creamy cucumber Tzatziki sauce.

As these patties are grilled, not fried, it is only 160 calories and you can jazz it up with different toppings.  I used tzatziki, tomato, spinach and a shmear of hummus.

FALAFEL BURGER with TZATZIKI
Serves 3

INGREDIENTS

  • 1 can Chick Peas
  • 1/4 cup Panko
  • 1 Egg
  • 1 tsp Ground Cumin
  • 2 tsp Tumeric
  • 2 cloves Garlic Clove
  • 1/8 tsp Baking Powder
  • 40 g Shallots
  • 15 g Scallion
Tzatziki Sauce

  • 1 container Greek Yogurt 2%
  • 15 g Shallots
  • 100 g Cucumber
  • 1 Garlic Clove

DIRECTIONS

Chop the shallots and the onion and set aside
Mash the garbanzo beans and add to the mixture of shallots and onion.
Add the egg, beaten
Add seasoning and salt & pepper
Add panko and mix all together
Form into patties
let rest in the refrigerator for at lesat 20 minutes
Grill until warm all the way through and crispy in each side.

Serve with tzatziki and other toppings of your choice.

To make the Tzatziki sauce chop shallots, garlic and cucumber very finely.  Sprinkle with salt and drain with paper towels.  You want a creamy sauce. not watery.  You may need to squeeze the moisture out of the cucumbers a few times.  Mix with greek yogurt and let flavors marry for at least an hour.
