I’ve been a Chefanie groupie for some time now, so when I created this recipe I knew it would be perfect to share with the community! This summer my CSA box from Eat Well Farms has been filled with Middle Eastern Cucumbers. I have been trying to find new creative way to use them and have fallen back on ol’ faithful: cucumber and cream cheese. Cucumber Splits are a variation on the ol’ faithful theme and have become a staple in my kitchen this summer.
This recipe is under 200 calories! You gotta love that!!
Cucumber Splits
Ingredients:
Cucumber
Cream Cheeese (I enjoy the 1/3 fat variety)
Smoked Turkey Lunch Meat
Spring Onions, thinly sliced
Cherry Tomatoes
Salt & Pepper, to taste
Slice the cucumber in half and scrape out the seeds (I love my grapefruit spoons for this!). Spread 1 Tbs of cream cheese into each half. Top with turkey, onions, tomatoes and salt & pepper.
This is also 100% as delicious without the turkey!
